  ITC, under the EU-funded YEP project, aims to increase the use of Gambian local food in culinary schools, hotels, and restaurants to support local producers, promote national cuisine, and improve sustainability. The consultancy will assess current usage, develop menus, train chefs, and propose supply chain and marketing strategies, with the assignment to be completed in 8 weeks.
